The current elaboration process is inherited from traditional practices, beginning with the slaughtering of the pigs during the last months of the year (the coldest for salting and post salting) according to the natural cycle of the seasons.
The first references to the curing of hams in Spain date back to the Roman Empire, in the second century A.D. From then until now the ham is a gastronomic and cultural element essential on our tables.
